Rice Krispie Oven Fried Chicken for Two
The breadcrumbs I found way in the back of the pantry had expired. There was barely a tablespoon's worth of panko in the tin and I almost gave up on having fried chicken for dinner when I decided to try something. I poured some Rice Krispies out of the box, into the bowl and (with clean hands, of course) started just crumbling them till they resembled panko crumbs.
"Here we go!"
There's no picture, sorry, but the end result looked like good ol' fried chicken because The Husband came into the kitchen and said, "Oh! So you found breadcrumbs!"
He did seem a tad incredulous when I told him what I did but after a couple of bites, he (and I) was sold on the idea. I know people have made fried chicken using Cornflakes and this is no different although I think the Rice Krispies gave it a slightly airyer finish. Like panko!
So here it is, a non-recipe recipe for Rice Krispies Oven Fried Chicken for Two.
- 2 bone-in, skin on chicken thighs
- 4 heaping tbsp all-purpose flour
- 1 1/2 cups rice krispies crushed to coarse crumbs
- 1 egg, lightly beaten
- Salt/Pepper to your prefered taste. Paprika if you're feeling inspired.
Preheat oven 425˚F. Separate the leg from the thigh so you get 4 pieces altogether.
Mix salt & pepper into flour. Sprinkle salt and paprika into the Rice Krispies crumbs.
Dredge each peace of chicken in flour, then egg wash, then crumbs.
Place the pieces onto a rack on a baking sheet. Bake for 15 - 20 minutes on 425 then turn down to 330˚F and bake another 15-20 minutes or till donee. Test internal temp, make sure it's at least 180˚ and juices run clear when poked.
